We had this for dinner last night when we got back from teaching our HIIT class

It was so quick and incredibly tasty, I had to share with you all

Dinner is severed in literally 10 minutes so perfect for satisfying hungry bellies

Ingredients – this feeds 2 comfortably

  • 1 packet of microwavable rice
  • King prawns (its quicker to have cooked but you can use raw)
  • 4/5 tomatoes
  • Bag of baby leaf salad
  • 30g tomato paste
  • 30 ml red wine vinegar (optional as use it to dress the salad)
  • 30ml garlic paste or 4/5 garlic cloves – crushed
  • 10g fresh parsley – chopped
  • 2 tsp smoked paprika
  • 1 tsp dried chilli flakes


1 – Heat a wide based pan or wok with a little olive or coconut oil.

2 – Chop tomatoes to wedges and once the pan is hot add the garlic and tomatoes.

3 – In a separate bowl combine the red wine vinegar with a dash of olive oil and salt (this is your dressing for the salad if you want it).

4 – Add the spoked paprika, chilli flakes and tomato paste to the pan and cook for 30/60s.

5 – Add the prawns and cook for a further 5 minutes.

6 – Place the rice in the microwave and cook following packet instructions.

7 – Chop the parsley and add to the pan along with a splash of cold water.

8 – Season and cook for a further few minutes until the sauce has thickened.

9 – Serve with rice and salad
