Turkey meatballs with cauliflower rice and fruity salsa
These meatballs are handmade, easy to prepare and quick to cook. In this recipe it uses cauliflower rice but you could use basmati or brown rice if preferred

Ingredients
- 1 x Cauliflower
- 1 x Green apple
- 1 x Red onion
- 1 x Cucumber
- 1 x Red pepper
- 1 x Vegetable stock cube
- 30g Fresh parsley
- 30g Fresh mint
- 500g Turkey mince
- 100g Greek style yoghurt
Method
1 – Put a pan of water on to boil (for the rice). Chop the parsley and mix it (reserving a little) into the turkey mince. Split the mince into 16 small portions and roll into balls.
2 – Heat a frying pan with a little oil and fry meatballs for 8-10 mins. Alternatively place the meatballs in the oven for 18-20 mins at 190.
3 – To make the salsa core and dice the apple, along with the red onion, red pepper, cucumber and mint. Combine in a bowl with a little olive oil and season to taste.
4 – Then grate the head of the cauliflower, then add to the pan of boiling water along with the stock cube and cook for 4-5 minutes. Once cooked, strain the rice and cover until the meatballs are ready.
5 – Once the meatballs are cooked through, serve with the salad, rice and a dollop of Greek yoghurt.
