If you’re stuck for a healthy dinner option that the whole family can enjoy then look no further.

With minimal preparation time needed you have the rest of your evening to enjoy with the family. 

This simple recipe is full of flavor and with all fresh ingredients you can be sure that it’s as nutritional as it is tasty.

Whats needed?

3-4 chicken breasts

6 tomatoes

Handful of fresh chopped basil

2 cloves fresh chopped garlic

2 tbsp balsamic vinegar

1/2 tsp salt

1/2 tsp black pepper

4 oz shredded mozzarella cheese (about 1 cup)

Balsamic glaze (optional for garnish)

Your choice of side to serve it with, perhaps rice or even some sautéed spinach and crispy kale?

Method

Preheat the oven to 190 degrees

Chop the tomatoes into small ¼ pieces then the basil and garlic. Add these to a large bowl, add the vinegar and half of the salt and pepper. Chopping the ingredients into small bite size portions allows all the flavours to really combine and absorb into the chicken. 

Lay the chicken breasts flat in the bottom of a large baking dish and season with the remaining salt and pepper.  Pour the tomato mixture over the top of the chicken, spread evenly and top with the mozzarella cheese.

Note: Make sure you use a big enough baking dish where everything doesn’t pile up too high.  The thicker it is, the longer it will take to cook, so using a larger dish where things have room to spread out a bit.

Place in the middle of the oven for 35-45 minutes but make sure you check the chicken before hand to make sure it is done!  If the cheese does starts to go a little darker than you would like, loosely cover with foil.

Top with fresh chopped basil and balsamic glaze to garnish.
